Asafetida's is a gum or resin and was earlier used in Greek and persian cuisines. It is however, today, used in motly the cuisines of India and Thailand.
Similar in taste to garlic and onions. When cooked, its aroma is almost onion-like and just a little gives great taste to any pan-fried fish, veggies and to lentils. Asafetida's also great used on salted fish, grilled or roasted meats.
