Asafoetida or Asafetida (Ferula asafetida), which is also known as devil's dung, is a member of the parsley family. The plant is native to Iran, Afghanistan, India and Pakistan. A powder is produced from a resin-like exudate from the carrot shaped tap-roots. This powder has a distinctive acrid, somewhat bitter tasting, truffle-like flavor and alliaceous, garlic aroma.
Asafoetida is widely used in Indian and Arabian cuisines for its distinctive flavor and aroma. It is also believed to have digestive and antiflatulence properties.
